A cuisine that has its roots in poverty, just as the fields of the Orcia-Valley were poor of water, suitable for the cultivation of wheat and olives. To embellish the rest of the meal there is the freshness and excellence of the local raw materials and the touch of our chef Mario who wisely knows how to combine without distorting the authentic flavors of our land: the pecorino cheeses with honeys from many different flowers, the meat sauce made from the Chianina beef and maybe from the Cinta Senese porc, beans and vegetables slightly dressed with a touch of our green gold: the Extra Vergin olive oil.
